There is nothing better than a good pizza.- and I am not talking about your typical doughy, soggy, take-out kind. Mine is a little different. It’s fast and cooks in less than 5 minutes. Plus, it is so easy, your 6-year-old could throw it together – just put the ingredients in front of him/her.
I start with brown rice tortilla shells and whatever toppings I happen to have on hand.
Ingredients & Toppings:
- Brown Rice Tortilla shells (I use Food for Life which you can find in the frozen food section. I have also used flatbread but prefer a gluten-free option. Also cooking time for flatbreads will be a little longer.)
- Grated Parmesan Cheese
- Chopped fresh tomatoes
- 1-2 oz mozzarella cheese or Burrata (look for grass-fed if possible)
- Arugula
- Prosciutto
- Basil
- Oregano
- Extra-virgin olive oil
- Himalayan salt and fresh ground pepper
Other Toppings:
- Deli or roasted chicken
- Sausage
- Walnuts
- Chopped Kale
- Mango
- Sauteed onions
- Roasted mushroom
Tools:
- Pizza stone – my secret for preparing a crispy crust
- Fine-gauge grater
Directions:
Preheat the oven and pizza stone to 475 degrees F.
Prepare the pizza: Lay out the Tortilla shell, cover lightly with grated Parmesan (I use a very fine zester/grater to get a fine layer of cheese).
Layer on your preferred ingredients: I generally use a small amount of mozzarella or Burrata, thinly sliced or chopped tomato (remove seeds and as much of the juice as possible), some sort of meat or sausage and spices of oregano and basil – either fresh or dried. Do not overdo the toppings or your crust will become soggy.
Place the prepared pizza on the pizza stone, cook for about 4 minutes or until edges become nicely browned and crisp. Remove from the oven, layer with a cup of arugula, a few slices of prosciutto, a drizzle of EVOO, and salt and pepper to taste. Cut into quarters and enjoy your creation.
There are endless combinations you can create: mushroom, arugula, and truffle oil; chicken with walnuts; sauage and roasted hot peppers; ham, mango, top with micro greens, etc. You’re only limited here by your imagination.
Kale Topping:
To prepare a simple topping of kale, which adds a whole new dimension to pizza, take a few kale leaves, remove the hard center spine, slice the kale fine like a slaw. squeeze in fresh lemon juice, a touch of salt and EVOO, and massage the kale lightly. Yes, your hands will get a little messy but it turns the kale into a delectable treat. Layer a coating of the kale on the pizza once it is out of the oven. The heat of the pizza gently softens and melts in the flavor of this incredibly nutritious topping.
