Learn how to make this dressing and you’ll never buy another bottled dressing again.

This is so easy and something to always have handy in your refrigerator rather than bottled dressing filled with chemicals and preservatives. When chilled the olive oil may solidify slightly. Simply bring to room temperature before serving. I often add oils with health benefits like flax seed, avocado and borage oils to my dressings just to add nutrients. If you do not have these, simply stay with olive oil. Many of these more exotic oils are now available in your grocery store or here. (PS – even kids love this one!)

Ingredients:

  • 1 TB fresh lemon juice
  • 1 TB apple cider vinegar (or white wine vinegar
  • 1 TB water
  • 1 TB Dijon mustard
  • ½ cup extra virgin olive oil
  • 1 TB flax seed oil
  • 1 TB avocado oil
  • Salt & pepper to taste

Directions:

Whisk together the lemon juice, vinegar, water, and Dijon mustard. Add the oils and whisk until it you get a smooth, creamy consistency. To change it up add chopped garlic or any preferred spices – oregano, freshly chopped cilantro, parsley, etc. Season to taste with salt and pepper.

(Note: if you don’t have Flaxseed and/or avocado oil, just substitute olive oil. I add a little flax seed to my dressing for the health benefits to heart, skin, and digestion.)
